Blueberry Kale Salad

Kale is in season this time of the year in Boone and I love it! It is a wonderful addition to your diet, especially for those of us who could use a bit more calcium. And it can be an easy one too- If you keep the main salad separate from the goat cheese and blueberries this salad can keep up to 48 hours in the fridge!

Start by tearing the Kale from the stem into small leaves.  Next we will make the dressing: mix 4 tablespoons of olive oil and the juice from one half of a lemon and mix directly into the kale leaves. Then mix the following ingredients:

  • 1 Bunch of Kale 
  • 1/4 Chopped White or Red onion (whichever you have on hand)
  • 1 Diced Medium sized Cucumber

Top with 1 cup of blueberries and goat cheese to taste and Enjoy!
