Sweet potatoes are one of my favorite fall foods in North Carolina! Many of you may know them best from your grandmothers casserole but there are many inexpensive ways to incorporate sweet potatoes into your meals without added sugar and much prep time at all! I eat these as a side often but when I am looking to mix it up I sometimes add these to my soups, tacos, burritos and my salads.
Start by preheating your oven to 375 then begin rinsing and peeling your 3 Sweet potatoes, then cube your potatoes and place them in a mixing bowl. Next add to your mixing bowl:
- 2 Tablespoons of Olive Oil
- 1 Tablespoon of melted Coconut oil
- 1 teaspoons of Parsley
- 1 Teaspoon of Thyme
- 1.5 Teaspoons of Black Pepper
- 1 Pinch of Onion powder
- 2 cloves of minced Garlic
- 1 Pinch of Basil
- 1 Teaspoon of Sea Salt (Optional)
Bake for 30 minutes and enjoy!
