Mexican Cabbage Bowl

I try to avoid eating iceberg lettuce due to its minimal nutritional value but sometimes I miss the crunch that is not available in kale, mixed greens or spinach. A friend of mine suggested cabbage as bedding for dressing and a great addition to soups so I have been experimenting and have loved mixing it up! I made this dinner for two last night and it was so tasty, I just had to share: 

  • 1/2 head of chopped cabbage
  • 2 chopped roasted sweet potatoes
  • 1 chopped roasted yellow summer squash
  • 1/4 cup of brown rice
  • 3/4 cup of rinsed and drained chick peas (I use canned)
  • 1/3 cup of drained black beans (I make mine from dried beans)
  • 4 tbsp of cheddar cheese 
  • 4 tbsp of salsa

Can be lunch tomorrow if you keep the cheese separate
